Lavender Cupcakes

Wednesdays are relaxation days at my house – the perfect middle of the week regroup and recharge before I go back to long hours at the office. Today has been wonderful. I woke up to a cat pawing at my nose, politely purring to request that I pet them and a puppy who interrupted demanding that I rise with a face full of kisses. My partner brought me a cup of coffee in bed. Heaven.

Every Wednesday in Ottawa throughout the summer, LuluLemon puts on this event called Parliament Hill Yoga. If you live in Ottawa you might have seen tons of people with yoga mats, young and old, babies and dogs walking around downtown. If you haven’t been before, go – next week! Wednesday at noon. Be there. There were 2000 people on Parliament Hill today (yes really, 2000!) all doing synchronized downward dogs and triangle poses. Today, the instructor took us through some really nice poses but mainly asked us to focus on our breath… She asked us:

What would you do if you knew you could not fail?

What would you do if you knew you would succeed?

Why are you here today?

It was a very thoughtful practice, I really enjoyed it. It set the tone for the rest of my day. We walked home from the hill and met old friends for ice cream. Our friends are expecting twins! We chatted about pregnancy and the silly things little kids do like shouting “MY DAD HAS A PENIS!” from their backyard… I can’t wait until my kids are doing ridiculous things like that and they will, cause it was me that announced that previous fact to the world at the age of three…

So anyway, relaxation! Lavender is one of the best smells in the world, hands down. Lavender cake has been on my mind lately, so I took my relaxation day as an opportunity to bake some cupcakes. I’ve never cooked with lavender before, so I thought I would give it a try and also I am really feeling the need to have some purple icing in my life right now. All for relaxation!

Let’s get right to it! The Recipe:


Lavender Cake

Ingredients

  • 1 1/4 Cups unsalted butter, softened
  • 1 1/4 Cups organic, granulated sugar
  • 4 organic eggs slightly beaten
  • 2 1/4 Cups organic all purpose flour, sifted
  • 2 1/2 tsp baking powder
  • 1 1/2 Tbsp dried culinary lavender, chopped
  • 1 tsp vanilla extract
  • 3 tbsp milk

Directions

In a medium-sized bowl sift together flour and baking powder and set aside. In  mixer bowl with beater attachment, on medium speed, cream butter and sugar thoroughly until light and fluffy.  Stop and scrape the sides of your mixing bowl.  Return to medium speed and add eggs one at a time, beating thoroughly between each addition, until mixture becomes thick and glossy. Stop your mixer, scrape the sides as needed and return to medium speed to complete mixing.  About 1 minute until throughly mixed.  By hand, fold in the flour, lavender florets, vanilla and milk. Spoon the mixture into pans and bake for 1 hour at 350 F or until knife inserted in cake center comes out clean. If making cupcakes, bake at 350 F for 15 minutes. Let sit 10 minutes, run a knife along the edge to release the cake from the pan then turn out onto a wire rack to cool.  Let cool completely before frosting.

Oh my god guys, lavender cake. This recipe is a keeper, for sure. These cupcakes are refreshing and light. I think my icing skills are getting better too, what do you think? Finishing off the day with these cupcakes and a cup of tea is just bliss. Now that my partner has had licked the beaters and the icing bowl, oh and had four cupcakes, I think it’s time for bed. But for closing thoughts, I answered those questions our instructor posed to us today…
